Sheer khurma or sheer khorma (شيرخرما، literally "milk with dates" in اردو from سنسکرت زبان and فارسی زبان cognate word ksheera or sheer meaning 'milk' ) is a festival vermicelli pudding prepared by مسلمانs on عید الفطر and عیدالاضحی in افغانستان، بھارت، پاکستان، بنگلہ دیش and parts of Central Asia. It is a traditional مسلمان festive breakfast، and a dessert for celebrations. This dish is made from dried کھجور.

This special dish is served on the morning of Eid day in the family after the نماز عید as breakfast، and throughout the day to all the visiting guests. It is very popular throughout جنوبی ایشیا and وسط ایشیا.

Ingredients

The main ingredients used in Sheer Khurma are vermicelli، whole milk، شکّر، dates. Depending on the region، cardamom، pistachios، بادامزعفران، raisins، and عرق گلاب are also added.

Preparation

Vermicelli are fried in clarified butter. Then milk (sheer) is added and the vermicelli are allowed to cook further. As the mixture thickens، sugar and dates (Khurma) are added along with any other dried fruits.
